You can still have the frosting -- it's vegan! Use the non-dairy shortening of your choice (Earth Balance Buttery Sticks are my favorite, but all I had was Fleischmann's margarine this time around), and substitute almond or rice milk for the soy milk.
ETA: Actually, now that I look at the ingredients for Buttery Sticks, there may be too much soy for you. But you could still make the original vegan ganache to frost the cupcakes, or just slather them with the vegan lemon curd.
